El carnicero será responsable de la preparación, corte y porcionado de carnes, asegurando la calidad, frescura y presentación óptima de los productos cárnicos utilizados en las operaciones gastronómicas del hotel. Además, garantizará el cumplimiento de normas de higiene y seguridad alimentaria.

Responsabilidades principales:

  • Seleccionar, recibir y almacenar productos cárnicos según los estándares de calidad del hotel.
  • Realizar cortes de carne y pescado de acuerdo con las necesidades del menú y las indicaciones del chef ejecutivo.
  • Supervisar el almacenamiento de los productos en refrigeración y congelación, garantizando condiciones óptimas.
  • Gestionar el inventario de carnes y pescados y realizar pedidos según la demanda.
  • Aplicar técnicas de despiece y aprovechamiento para minimizar el desperdicio de productos.
  • Cumplir con las normativas de sanidad y seguridad alimentaria, asegurando la limpieza de herramientas y áreas de trabajo.
  • Coordinarse con el equipo de cocina para garantizar la disponibilidad de cortes de carne y pescados adecuados para los diferentes platos del menú.
  • Experiencia previa como carnicero/pescadero en hoteles, restaurantes o carnicerías/pescaderías
  • Conocimiento avanzado de técnicas de corte y despiece.
  • Familiaridad con normativas de higiene y seguridad alimentaria.
  • Capacidad para trabajar bajo presión y en equipo.
  • Atención al detalle y compromiso con la calidad del producto.
